"For me the organic things is just a natural thing to do. If you're just a consumer you don't necessarily think about it. All those things that happen in agriculture, also viticulture or fishing. There is often very little respect towards nature or that there will be generations after us. For me it just feels natural not to do something harmful in the vineyard." says Kai Schubert, winemaker and owner of Schubert wines. He is talking about the importance of organic wine farming and winemaking. Kai grew up in Germany and his passion for winemaking led him to buy a winery in New Zealand. He gives insight into the many factors that play a role in the vineyard ever before the actual wine making process starts.
