"The first thing is the idea because for me to create a cake is very important because people buy cake with their eyes" says French Pastry Chef Gregory Doyen. He explains that after he created a design it can sometimes take 5 minutes to make or sometimes two or three days. Gregory believes that beautiful cakes should be eaten and enjoyed and it should be part of the whole experience of being presented in a beautiful way. It doesn't bother him if it took him two hours to create the cake and it gets eaten in 2 minutes. He doesn't think of it in this way, but rather the joy it brings to the person who eats it.
